where can i change how long was a music at the end of a map?

It is server variable, mp_chattime. Edit this in your ../cfg/gungame5/gg_server.cfg

Make sure you have gg_dynamic_chattime 0 in your ../cfg/gungame5/gg_en_config.cfg
